Happy Monday! After a couple weeks of back-to-back visitors, life is back to normal. It was fun having family here, but I’m someone who thrives off structure so it’s nice to have a little normalcy again. Sunday night we went to bed early and this morning I was up bright an early to read, do PT, and prep for the day. I love my mornings!
This daily eats post is from Saturday. My second-oldest sister was visiting from Minnesota and it was so fun to have her around. We had a perfect day with gorgeous weather and a morning at the zoo! I haven’t been to the zoo in forever, and it was even better to see the zoo through my 20 month-old niece!
I never want my daily eats posts to be about comparison. Rather they are here to provide inspiration for your eats and give you freedom to listen to your body and enjoy good food, as I am learning to do. Every person has different energy and nutrition needs. No diet can tell you how to eat, you can only do that for yourself.

Saturday morning I got up a little early to get some work done so I could focus on being with family the rest of the day. As I worked, I baked some fresh sourdough that I had prepared the night before.
Once everyone was up and coffee was in hand, I made Blake a smoothie and myself an oatmeal pancake. I used to eat these all the time, but haven’t in a while. All you do is mix 1/3 c quick oats, 2 egg whites, 1/2 tsp baking powder, dash of cinnamon, pinch of salt, and 1/2 mashed banana, and cook it in coconut oil on a pan. You can mix in whatever you want like chia seeds, coconut, chocolate chips, berries, or different spices. Topped mine with some plain yogurt, sunflower seed butter, and sliced banana.
After breakfast we made our way to the zoo! On the way we listened to classic Disney songs that my niece loved! The zoo was so much fun! My niece kept say “whoa” at everything and trying to sound out new words like “goat” and “tortoise.” It was also nice to be outside and spend time with my sisters, niece, brother-in-law, and hubby. Close to 12, I started feeling hungry and thirsty, and regretted not bringing a water bottle and snacks. I snacked on some chips and salsa with everyone to tide me over till lunch.
While at the zoo, we smelled bacon and all started craving BLT’s for lunch. So on the way home, we picked up some supplies. While prepping the food, I snacked on carrots and sampled two Health-Ade Kombucha flavors – Lemon Ginger and Beet. Beet was my favorite!
The BLT’s were amazing, especially with fresh sourdough. Mine included bacon, avocado, tomato, and arugula, plus some more carrots on the side. We didn’t end up eating lunch until 2:30, so I was hungry for this one.
Later that afternoon, the sister and my niece walked to our local coffee shop to pick up coffee and then sat outside while my niece played. It was gorgeous outside! I could live in Spring weather forever.
After my niece was down for bed, we all teamed up to make dinner. My brother-in-law is an excellent cook and had a whole menu planned. So my sister, Blake, and I all chopped and helped prep dinner per his instruction. As dinner was cooking, I snacked on a bunch of chips and salsa since I was getting hungry and that sounded so good. Dinner included a seared sea bass with avocado crema and mango salsa, cilantro rice, and heirloom tomatoes with olive oil and salt and pepper, plus a glass of Sauvignon Blanc. He also had made a scallop ceviche, but after all the chips and this plate of food I was full, so I just had a sample and wished I had saved more room for these! Amazing!
We sat around and talked for a while, so by the time we finished cleaning up, we were all pretty tired. I was still satisfied, but they had bought a couple flavors of Jenni’s ice-cream and I really wanted some. Part of intuitive eating is sometimes eating more than you need, and that is okay. I was full after a couple small scoops, but I enjoyed the experience of the food and sharing it with others.
