Hello! It’s been a while since I’ve done a daily eats posts. When I surveyed you all on Instagram, you asked for more food round-ups and recipes, so I plan to incorporate more food posts on here this year.
Honestly, this week has been a little emotional. I’m only into my second week of full-time entrepreneurship, and I’m figuring out how to schedule my days, stay focused, be productive, and continue to build and prepare my businesses. Exciting news! Okay, now onto the food. Before I dive in, I always like to say that these posts are not for comparison. Rather they are here to provide inspiration for your eats and give you freedom to listen to your body and enjoy good food, as I am learning to do. Everyone has unique nutritional needs. My alarm went off at 5:30, but I continued to snooze until 6:10. Just wasn’t ready to get out of my warm bed. When I finally got up, I had some water and did my morning routine (Bible, breathing, prayer, journalling, reading) and then a workout. If I do exercise, it’s usually in the morning and completely depends on what I’m feeling.
Breakfast: After getting cleaned up, I poured myself some coffee (that my dear hubby had made), and put together my favorite breakfast. Two slices of Trader Joe’s sprouted sourdough toast, one topped with avocado, TJ’s Everything but the Bagel Seasoning, and a fried egg, and one topped with sunbutter and banana. I had the rest of the banana with some more sunbutter on the side. I ate this while going through my inbox and setting up for the day.
I spent the morning putting together samples of Beautycounter products for clients, connecting with my team, and correspondence. Before lunch, I walked to the post office to mail the samples and had a couple calls.
Lunch: While prepping lunch, I snacked on some crackers and snap peas. For lunch, I sauteed chicken thighs in avocado oil, salt, and TJ’s 12 Salute seasoning (so good!), and made a bowl with spinach, leftover brown rice and roasted broccoli, and the chicken. I usually like having something sweet after lunch, sometimes it’s fruit, sometimes it’s chocolate. Today I had an apple and a second cup of coffee.
The afternoon was more work at home, nothing too exciting. I honestly have been pretty focused on these work-from-home days that I have to intentionally take breaks for meals and breaks. Again, learning the entrepreneur life. Around 3:30pm I started getting hungry so sliced up some banana bread I made over the weekend (loving this recipe from Oh She Glows) and topped it with sunbutter.
Dinner: I wrapped up work at 5 and when Blake got home we made breakfast tacos for dinner, complete with homemade pico de gallo, cheddar, eggs, avocado, bacon, and veggies on the side. This is one of our favorite, easy dinners.
Currently wrapping up the evening finishing up this post, watching Greys, and will probably have some tea and pecan bars. I love ending my evenings with something sweet.
